We were getting ready to leave for Disney World and Miami for 10 days!

I was planning ahead because our flight left very early and we were heading straight to Epcot from the airport.  I needed to plan ahead with snacks since I do not want to be spending crazy amounts of money on food while we are there, so I went out and bought a few good snacks, but decided to make some Energy Balls as well.

I basically decided to use what I had leftover in the house – hemp powder, some cacao nibs, shredded coconut, and vanilla extract. They ended up being super yummy, and all I needed to do was pick up some dates 🙂

First up….

Hemp/Cacao Energy Balls

Ingredients:

1 C pitted dates (I used organic medjool dates, and I found them in the produce section of my local grocery store)
1 C raw walnuts (organic if possible)
1/4 C hemp protein powder (most grocery stores/health foods stores should carry this, but I ordered off of Vitacost.com)
1/4 C cacao nibs (I have only found these at the health food store and online)
1/2 T to 1 T pure maple syrup for added sweetness (optional – I really think I could have gotten away with not using any)

Directions:

Add the walnuts and hemp protein into a food processor and process until coarse, then add in the dates and process until it becomes a paste like consistency (you should be able to squish it together without having it all fall apart).  Then just take small amounts and form into balls, or make bigger ones…it’s completely up to you!

and….

Coconut/Vanilla Energy Balls

Ingredients:

1 C pitted dates
1/4 C raw walnuts (organic if possible)
1/4 C shredded coconut
1 tsp (or to taste) vanilla extract

Directions:

Add the walnuts and shredded coconut into a food processor and process until coarse, then add in the dates and vanilla extract and process the same as the Hemp/Cacao balls.

Note: I like putting them in the fridge to get them to set, and I usually just eat them right out of the fridge as well (unless I bring them with me to snack on when I leave the house).  You can also freeze them.  Lastly, try not to eat too many in one sitting 😉

These are great as a dessert too!
